On iPhone, tap and hold the desired card in Wallet, then drag it to set it as the default. On Apple Watch, sign in to the Wallet app and choose 'Default card'.
To pay with iPhone, use Face ID or Touch ID and bring the device closer to the POS. With Apple Watch, press the side button twice and bring the watch closer to the player.
On iPhone, open the Wallet app, select the card, and tap 'Remove Card'. On Apple Watch, open Wallet and remove the card directly or through the Watch app on the iPhone.

It's available on iPhone SE, 8 and later, and on Apple Watch Series 4 and later.
The card number can be viewed in the Wallet app on iPhone or Apple Watch, by selecting the card and tapping 'Card Number'.
